ESTATE SERIES SHIRAZ CABERNET 2016

Tasting Notes:

This Estate Series Shiraz Cabernet is a focused blend that highlights three distinct varietals. Premium Shiraz, Cabernet Sauvignon and Cabernet Franc grapes were sourced from Niagara-on-the-Lake vineyards and each varietal spent an initial nine months aging on their own in oak. After selecting the very best barrels, rigorous blending trials were conducted to determine the exact combination of wines that would best capture the characteristics, potency and structure of the three premium blocks of fruit for the 2015 vintage. That final assemblage of 64% Shiraz, 35% Cabernet Sauvignon and 1% Cabernet Franc was then aged for an additional there months  in a combination of new, American and French oak barrels. The result is a medium-bodied and fruit forward red with ripe flavors of sweet black currant, dark plum and blueberry. Notes of black currant, dark plum, sweet spice, cocoa and vanilla linger on the drying finish. Enjoy with aged cheddar and gouda, grilled steak with a red wine reduction, rack of lamb, wild game, rich beef stew and shepherd’s pie.
